Description

Ingredients
3 large eggs
1/2 cup cottage cheese
1/4 teaspoon cream of tartar (or 1/2 tsp lemon juice)
Pinch of salt
Optional: cinnamon, vanilla, herbs, shredded cheese, or sweetener
Instructions
1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
2. Separate the eggs into two bowls—whites in one, yolks in the other.
3. Whip the egg whites with cream of tartar until stiff peaks form.
4. In a separate bowl, mix the cottage cheese, egg yolks, and salt until smooth.
5. Gently fold the whipped egg whites into the cottage cheese mixture in batches.
6. Spoon 6–8 small rounds onto the baking sheet.
7. Bake for 25–30 minutes, or until lightly golden.
8. Cool slightly before serving. Enjoy warm or store for later use.
