This garlic butter salmon spinach mushrooms recipe is a quick, healthy one-pan dinner packed with flavor. Ready in under 30 minutes, it’s perfect for busy weeknights and loaded with omega-3s, fiber, and protein.
Ingredients
2 salmon fillets (skin-on, ~6 oz each)
2 tablespoons butter
1 tablespoon olive oil
3 garlic cloves, minced
2 cups baby spinach
1 cup sliced mushrooms (cremini or baby bella)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Juice of 1/2 lemon
Instructions
1. Pat salmon dry and season with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat.
3. Place salmon skin-side down and sear for 4–5 minutes until crispy.
4. Flip salmon, reduce heat to medium, and add butter and garlic.
5. Spoon garlic butter over salmon while cooking for 2–3 more minutes.
6. Push salmon to the side of the skillet; add mushrooms.
7. Sauté mushrooms for 4–5 minutes until golden.
8. Add spinach and cook for 1–2 minutes until wilted.
9. Squeeze lemon juice over everything.
10. Serve hot with extra garlic butter sauce drizzled on top.
Notes
Use baby spinach for best texture and taste.
Don’t overcrowd the pan or the mushrooms will steam.
Add red pepper flakes for a hint of spice.
