Description
A warm and hearty cabbage soup that’s low in calories, high in fiber, naturally gluten- and dairy-free, and packed with flavor. Great for meal prep or freezing.
Ingredients
1 tablespoon olive oil
1 yellow onion, diced
2 cloves garlic, minced
3 carrots, sliced
2 stalks celery, chopped
4 cups green cabbage, chopped
1 can (15 oz) diced tomatoes
6 cups vegetable or chicken broth
1 teaspoon dried thyme
1/2 teaspoon smoked paprika
Salt and pepper, to taste
Optional: 1 cup white beans or cooked lentils
Instructions
1. Heat olive oil in a large pot. Sauté onions, garlic, carrots, and celery for 5–7 minutes.
2. Add cabbage, tomatoes (with juice), broth, thyme, paprika, salt, and pepper.
3. Bring to a boil, then reduce heat and simmer uncovered for 30–40 minutes.
4. Optional: Stir in beans or lentils during the last 10 minutes.
5. Taste and adjust seasoning. Serve warm with fresh parsley if desired.
Notes
To freeze, let cool and portion into containers without potatoes.
For extra richness, stir in a spoonful of coconut milk or cashew cream.
Add lemon juice or vinegar before serving to brighten flavor.
