Ingredients
2 cups shredded cooked chicken (or 1 lb ground beef)
1 can (10 oz) Rotel or diced tomatoes with green chiles
1/2 block cream cheese (4 oz), softened
1/2 cup sour cream
1/2 cup salsa or taco sauce
1 can (10 oz) cream of chicken or mushroom soup
1/2 packet taco seasoning
2 cups shredded Mexican blend cheese
2 cups crushed tortilla chips (or Doritos)
Optional: black beans, corn, jalapeños, green onions
Instructions
1. Preheat oven to 350°F and grease a 9×13 casserole dish.
2. Mix all ingredients except chips and cheese in a large bowl.
3. Layer 1 cup crushed chips in the bottom of the dish.
4. Spread half the mixture over the chips and sprinkle with 1 cup of cheese.
5. Repeat layers: chips, mixture, cheese.
6. Bake uncovered for 25–30 minutes until bubbly and golden.
7. Let rest 5–10 minutes before serving.
Notes
Use ground beef instead of chicken for a richer version.
Make it ahead and refrigerate for up to 24 hours.
Freezes well up to 2 months—thaw and bake when ready.
