Description

Quick, satisfying, and packed with flavor—this soba noodle salad with peanut sauce is a delicious lunch or dinner that’s easily customizable and meal-prep friendly.


Ingredients

6 oz 100% buckwheat soba noodles

1 red bell pepper, thinly sliced

1/2 cucumber, julienned

1 cup shredded carrots

2 tbsp chopped cilantro

1/4 cup roasted peanuts

2 scallions, chopped


Instructions

1. Cook soba noodles according to package instructions. Rinse under cold water.

2. Whisk together 1/4 cup peanut butter, 2 tbsp soy sauce or tamari, 1 tbsp rice vinegar, 1 tbsp maple syrup, 1 tsp sesame oil, juice of 1 lime, 1 clove garlic (grated), 1/2 tsp ginger (grated).

3. In a large bowl, toss noodles with prepared vegetables and sauce.

4. Top with peanuts, scallions, and extra cilantro before serving.

Notes

Add tofu, chicken, or edamame for more protein.

Store leftovers for 3–4 days in the fridge.

Adjust chili or sriracha to desired spice level.
