Description
Flaky, savory, and quick tomato tarts made with puff pastry, ripe tomatoes, and herbs. Perfect for brunch, lunch, or a quick snack.
Ingredients

- 1 sheet puff pastry (thawed)
- 3–4 ripe tomatoes, sliced
- 1/2 cup goat cheese or cheese of choice
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh basil or thyme for garnish
- Optional: balsamic glaze for drizzling
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
- Roll out puff pastry to 1/8 inch thick and score a border around edges.
- Dock the center with a fork and bake for 10 minutes.
- While baking, slice and salt tomatoes, then pat dry after 10 mins.
- Remove pastry, layer with cheese and tomato slices.
- Season and drizzle with olive oil.
- Bake another 18–22 minutes until golden and crisp.
- Cool slightly, top with herbs and optional balsamic.
- Slice and serve.
Notes
- You can par-bake and prep ahead of time for easier serving.
