Description

Flaky, savory, and quick tomato tarts made with puff pastry, ripe tomatoes, and herbs. Perfect for brunch, lunch, or a quick snack.


Ingredients

Scale
  • 1 sheet puff pastry (thawed)
  • 34 ripe tomatoes, sliced
  • 1/2 cup goat cheese or cheese of choice
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil or thyme for garnish

 

  • Optional: balsamic glaze for drizzling

Instructions

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  • Roll out puff pastry to 1/8 inch thick and score a border around edges.
  • Dock the center with a fork and bake for 10 minutes.
  • While baking, slice and salt tomatoes, then pat dry after 10 mins.
  • Remove pastry, layer with cheese and tomato slices.
  • Season and drizzle with olive oil.
  • Bake another 18–22 minutes until golden and crisp.
  • Cool slightly, top with herbs and optional balsamic.

 

  • Slice and serve.

  • You can par-bake and prep ahead of time for easier serving.
